About the Role

The Distillery Chemist supports the distillery’s analytical, quality, and compliance operations through hands‑on laboratory work, chromatographic testing, and routine analysis of fermentation, distillate, and raw materials. This role ensures product consistency, accuracy of analytical results, and adherence to regulatory and internal quality standards. The position is primarily lab‑based but requires periodic collaboration with production teams to collect samples and troubleshoot issues. The role also requires completing TTB Chemist Certification, for which the company will provide support.

 

Main Responsibilities

  • Perform analytical testing on fermenters, distillate, and bulk materials using HPLC, GC, GC‑MS, Auto‑Titrators, Refractometers, and DMA equipment.
  • Interpret analytical data and report results accurately and promptly to support production and quality decisions.
  • Ensure incoming raw materials meet specifications and assist in resolving quality concerns.
  • Maintain, calibrate, and verify laboratory instruments and ensure accurate documentation.
  • Conduct sensory evaluations and support the site’s sensory program.
  • Follow GMP, ISO, and food safety principles; additional HACCP training will be provided if needed.
  • Collect samples from production areas when required and collaborate with operations to support process improvements.
  • Maintain laboratory supplies and participate in continuous improvement initiatives.
  • Prepare Certificates of Analysis (COAs) and support regulatory activities related to TTB requirements.

 

Requirements

  • Strong hands‑on experience with chromatographic equipment (GC/MS, HPLC) and interest in analytical data analysis.
  • High attention to detail, strong problem‑solving ability, and capability to troubleshoot analytical instruments.
  • Ability to work independently in the lab and collaborate effectively with operations when needed.
  • Familiarity with GMP, ISO, and basic food safety practices; HACCP is a plus.
  • Comfortable navigating production areas for sample collection.

 

Education

  • Bachelor’s Degree in Chemistry (strongly preferred) to meet TTB Chemist Certification requirements.
  • Food Science degrees may also be acceptable if they include sufficient chemistry coursework.

 

Experience

  • Minimum of 3+ years of laboratory experience with strong analytical chemistry skills.
  • Chromatography experience (HPLC, GC, GC‑MS) is essential.
  • Experience in beverage alcohol, distillation, or fermentation is a plus but not required.
  • Experience in regulated industries such as food, chemical, or pharmaceuticals is highly valuable.
  • Familiarity with ISO, GMP, or food safety programs is beneficial.

 

Language

  • Strong verbal and written communication skills in English.
